Senior Sous for Award Winning Hotel, Cambridgeshire up to £28k + Bonus

Clear Selection are looking for a Senior Sous Chef to join this multifaceted hotel in a rural location near to Cambridge. Salary is competitive, up to £28,000 for quality candidates with all relevant experience + tips and bonus incentives make this a fantastic package!

The Company:

Independent 4 star hotel with an award winning rosette restaurant, popular with both corporate and private guests.

The Role:

•Clear Selection are seeking a knowledgeable Sous chef who is experienced in rosette cooking, who can happily service the day to day business of the functions, restaurant and spa and work in unison with the Head Chef, deputising for him as required.

•This is a multi functional operation which requires a hands on Sous Chef, with banqueting experience and the ability to cater for all aspects of the hotel, including wedding parties from 50-100 people as well as catering for corporate functions, spa & leisure guests, and a 50 cover 2 AA rosette restaurant.

•Working and helping to grow the current brigade, you will be responsible for the day to day management of the team, assisting and support the Head, working closely to adapt menus and manage staff, stepping up in the Heads absence.

•Shifts are 5/7 days a week

•Salary is dependent on experience and flexibility

•Limited accommodation on offer, first come first served!

Looking for a Sous Chef who:

•Is enthusiastic, motivated, and hard-working as well as very hands on.

•Has varied kitchen experience, including banqueting

•Has fine dining/rosette experience to a minimum of 2 rosette

•Will be expected to know how to price menus and produce the daily specials, giving a chance to show flare and creativity.

•Will be responsible in supporting the Head Chef with the day to day running of the kitchen operation, this will include stock control and ordering, menu planning, training and supervision of junior members of staff and ensuring that the highest possible levels of service and quality are achieved at all times.

•Is confident and able to step up in the absence of the Head Chef, running the kitchen, overseeing staff and maintaining the high standards of service.
